Apple Fruit Cake
Cake Ingredients
1/2 cup Butter
1 cup Light brown sugar -- firmly pressed
1 Egg
1 teaspoon Vanilla
1 3/4 cups self raising flour
1 teaspoon Baking powder
1/2 teaspoon bicarbonate soda
1/2 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/2 teaspoon Salt
1/4 cup Milk
1 1/2 cups Golden Delicious Apples -- cored,pared,finely chopped
1 cup Raisins or chopped dates
1 cup Mixed candied fruit
1 cup Nuts -- chopped
Directions
Preheat oven to 275F or 140C. In mixing bowl, cream butter; gradually add sugar and beat
until light and fluffy. Beat in egg and vanilla. Sift together flour, baking powder, soda, cinnamon,
nutmeg and salt;
add to creamed mixture alternately with milk, beginning and ending with dry ingredients.
Fold in apples, raisins, mixed fruits and nuts. Spread evenly in a 9x5x3 inch loaf pan lined
with waxed paper.
Bake 2 1/2 to 3 hours in oven. Cool in pan. Remove paper; wrap and store in cool place.
