Fresh Apple Nut Cake with Caramel Icing

Cake Ingredients
3 cups Sifted plain flour
1 teaspoon Baking powder
1 teaspoon Salt
1 teaspoon bicarbonate soda
1 teaspoon Cinnamon
3/4 cup Oil
4 cups(about 6) Apples -- finely chopped
1 teaspoon Vanilla
2 Eggs
2 cups Sugar
1 cup Pecans -- finely chopped
Caramel Icing Ingredients
2 1/2 cups Sugar
3/4 cup Milk
1 Egg
1/2 cup Sugar
1/2 cup butter
1 teaspoon Vanilla
1. Preheat oven to 350 degrees.
2. In a large mixing bowl, sift flour, baking powder, soda, salt & cinnamon.
3. Add oil, apples & vanilla. Beat at medium speed for 2 minutes until well blended.
4. In another bowl, beat eggs until mixture is light yellow. Gradually add sugar &
continue beating until light & fluffy.
5. Fold egg mixture into the apple mixture, blending thoroughly. Stir in nuts.
6. Pour into lightly greased 10" tube pan. Cook for 1 hr. & 10 min. or until skewer
inserted comes out clean.
Caramel Icing: Mix 2 cups of sugar, milk & egg in saucepan & bring to a boil.
Brown 1/2 cup sugar in saucepan, then add it to egg mixture while boiling.
Turn down heat, stirring, cool slightly & stir in butter & vanilla.
Cool & spread over cake.
