Cake Ingredients
          1/2  Cup   Butter
   1 1/2  Cups    Sugar
   3  Large Eggs
   2   Cups  Self raising Flour
   2      Tsp   Baking Powder
     3/4  Tsp  Soda
     1/2  Tsp Salt
     1/4 Cup  milk or buttermilk
   1 tsp  Vanilla
   1 Cup Mashed Bananas
         -----Caramel Icing-----
     1/4  Cup  Butter
     1/2  Cup  Brown Sugar
     1/8 Cup  Milk
     1/2  tsp  Vanilla
   1  Cup Icing Sugar
          pinch         Salt
Directions
1.  Preheat oven to 350F or 180C.  
2.  Cream together the butter and sugar until light and fluffy. 
3.  Beat eggs lightly and add to creamed mixture, blending well. 
3.  Sift together dry ingredients and add alternately with buttermilk and vanilla.  
4.  Fold in bananas and stir to blend. 
5.  Pour batter into two greased 8-inch cake pans or one 9 x 13 baking pan. Cook for 35 to 40 mins. 
For the icing, melt the butter in saucepan and add brown sugar. Cook over low heat, stirring constantly, for 2 mins. 
Add milk and allow to come to a boil. Immediately remove from heat and allow to cool before adding
vanilla, sugar, and salt. Beat well and ice cake.
Blue Ribbon Banana Cake with Creamy Nut Filling


 
Cake Ingredients
     1/2  cup  butter or margarine
   1 1/2  cups  Sugar
   3    Eggs
   1      cup  Mashed bananas
   1      pinch  Salt
   2      cups  Sifted flour
   1      teaspoon      bicarbonate soda
   1      teaspoon      Baking powder
     1/2  cup   Buttermilk or milk
   1      teaspoon      Vanilla
     1/2  cup  Chopped pecans
   1      cup  Shredded coconut
     1/2  cup   Brown sugar -- optional
-----Nut Filling---
     1/2  cup           Sugar
   2      tablespoons   Flour
     1/2  cup           Cream
   2      tablespoons   Butter
     1/2  cup           Chopped pecans
     1/4  teaspoon      Salt
   1      teaspoon      Vanilla 
-- --White Snow Icing---
     1                       Egg white
     1/3  cup              Butter or margarine
     1/2  teaspoon      Coconut extract
     1/2  teaspoon      Vanilla extract
   2 cups icing sugar
Directions
1.  Preheat oven to 350F or 180C.  
2. Cream together butter and sugar until fluffy. 
3. Add eggs. Beat 2 minutes at medium speed.
4. Add bananas. Beat 2 minutes. 
5. Sift together dry ingredients, add to creamed mixture along with buttermilk and vanilla.  Beat for 2 mins.
6.  Stir in nuts. 
7. Turn into 2 greased and floured 9" round layer cake pans.   Sprinkle 1/2 cup coconut on each layer.  
8. Cook for 25 to 30 minutes. Cool.

 For Creamy Nut Filling: Combine ingredients in heavy saucepan. Cook until thickened. 
Add pecans, salt and vanilla.
 For White Snow Icing: Cream together egg white, butter, coconut extract and vanilla.
 Gradually add sugar, beating till light and fluffy.

 

Banana Health Loaf


 
Ingredients
  • 1 cup All Bran cereal 
  • 1 cup low fat milk 
  • 1 cup wholemeal self-raising flour 
  • 1 teaspoon bicarbonate of soda 
  • 1/2 cup raw sugar  
  • 1/2 cup chopped dried apricots 
  • 1/2 cup sultanas 
  • 1/2 cup desiccated coconut 
  • 1/2 cup wheatgerm 
  • 3 bananas 
  • 2 eggs 
Directions
  1. Preheat oven to 170C.
  2. Place All Bran in a small bowl, cover with milk and allow to stand 10-15 minutes. 
  3. In a large bowl combine flour, bicarbonate of soda, sugar, dried apricots, sultanas, coconut and wheatgerm. Stir well.
  4. Mash bananas thoroughly, break in eggs and stir to combine.
  5. Add banana mixture and soaked All Bran to dry ingredients. Mix well.
  6. Pour mixture into greased and lined loaf tin and bake at 170°C for approximately 1 hour or until skewer inserted in the centre comes out cleanly.
  7. Turn onto a cake cooler and allow to cool.
  8. Slice and butter if desired.
Banana Fudge Cake
 
Cake Ingredients

   1 Cup  Wholemeal Flour
   1 Cup  self-raising Flour 
     1/2  Cup Cocoa Powder
   1 1/2  Cup   Sugar
   2      Tsp    bicarbonate soda
     1/4  Tsp    Salt -- Optional
   3 Large very ripe mashed bananas
     1/2  Cup  milk
   2    Eggs
   1 1/2  Tsp     Vanilla Extract
Glaze:
   1 1/2  Cup  icing Sugar
   1      Tbsp   Cocoa Powder -- Plus
   1 1/2  Tsp     Cocoa Powder
   3      Tbsp   Skim Milk
   1      Tsp  Vanilla Extract
     1/4 Cup  Chopped Walnuts -- Plus
   2      Tbsp   Chopped Walnuts -- Optional
Directions
1.   Preheat Oven to 350F or 180C. Coat a 9 x 13" pan with nonstick cooking spray.
2.  Combine the flours, cocoa, sugar, bicarbonate soda, and salt, and stir to mix well.  
3.  Add the banana, buttermilk, egg whites ,and vanilla extract, and stir to mix well.

4.   Spread the batter evenly in the pan.  
5.  Cook for about 35 min., or until a skewer inserted in the center of the cake comes out clean. 
Glaze: combine the glaze ingredients in a small bowl.  If using a microwave oven, microwave the glaze, 
uncovered, at high power for 35 seconds, or until runny.  If using a conventional stove top, transfer the
glaze to a small saucepan and place over medium heat for 30 seconds, stirring constantly.  
Drizzle the glaze over the cooled cake, and let harden before cutting into squares and serving.
 
Banana Cake with Caramel Cream Cheese Icing


 
Cake Ingredients
   2      cups          self-raising flour
   1      teaspoon      bicarbonate soda
                        Pinch salt
     1/2  cup  unsalted butter -- softened
   1   cup   white sugar
   2      large         Eggs
3 mashed ripe bananas
     1/4  cup           Sour cream
   1      teaspoon      Pure vanilla extract
     1/2  cup           Chopped pecans
 -----GLAZE-----
     1/4  cup           Packed brown sugar
     1/4  cup           Sweetened condensed milk
   2      tablespoons   Unsalted butter
   1      cup  icing sugar
   1      teaspoon      Pure vanilla extract
  -----ICING-----
  90 grams     Cream cheese -- softened
   6      tablespoons   Unsalted butter -- softened
   1      tablespoon    Sour cream
   1      tablespoon    Pure maple syrup
   1      teaspoon      Pure vanilla extract
   3   To 3 1/2 cups icing sugar
Directions
1. Preheat Oven to 350F or 180C. Grease a 13- by 9-inch baking pan.  
2. Sift together the flour, bicarbonate soda and salt; set aside.
3. Beat butter and granulated sugar in large bowl of electric mixer on high speed until light, 2 minutes. 
4. Add eggs to the butter mixture, one at a time, mixing well after each addition. 
5. Stop the mixer and add bananas, sour cream and vanilla. Mix in on low speed.
6. Fold in the dry ingredients and nuts with a rubber spatula.
7. Transfer batter to prepared pan. Cook for 35 mins or until a toothpick inserted in the center comes out clean.

GLAZE: For caramel glaze, combine brown sugar and condensed milk in a small saucepan. Cook over medium
heat, stirring until mixture begins to bubble.  Reduce heat to low and add butter; cook and stir until melted.
Remove from the heat and stir in icing sugar and vanilla. Spread over cooled cake.
ICING:  beat cream cheese and butter until smooth.  Stir in sour cream, maple and vanilla. 
Add enough icing sugar to make a smooth, thick icing. Carefully spread over caramel glaze.
Banana Layer Cake with Cream Cheese Icing

 
Cake Ingredients
  4 mashed bananas
     1/3  cup    milk
   2/3      cup   butter or margarine
   2      teaspoons     vanilla
   2      cups          sugar
   4     eggs -- unbeaten
   4 1/2  cups   self-raising flour -- sifted
   4      teaspoons     baking powder
   1      teaspoon      salt
    Icing
     1/2  cup           butter
   250 grams  cream cheese
   1      teaspoon      vanilla
   2 1/4  cups          sugar
       milk -- optional
Directions
1. Preheat oven to 350F or 180C.  
2. Cream together butter and vanilla; gradually add sugar, beating until light and fluffy. 
3. Add eggs, one at a time, beating well, mix until light and fluffy.  
4. Sift together flour, baking powder, and salt. Add alternately with bananas and milk to creamed mixture, 
    beating some after each addition.
5. Pour into three greased 9 inch pans.  Cook for 30-35 min.

Cream Icing:
Combine butter, cream cheese, and vanilla.  Cream well.  Gradually add powdered sugar 
(sift if lumpy), beating well.  If mixture is too thick to spread, add a small amount of milk.
Pineapple-Banana Nut Cake

 
Cake Ingredients
       1 1/2  cups    self raising   flour
     3/4  teaspoon      bicarbonate soda
     1/2  teaspoon      cinnamon
   1      cup           sugar
     1/2  teaspoon      salt
     3/4  cup           oil
     3/4  cup           crushed pineapple in juice
   2                    eggs -- beaten
   1      cup           bananas -- diced
     3/4  teaspoon      vanilla
     1/2  cup           pecans -- chopped
Directions
1. Preheat oven to 350F° or 180C°.  Grease 9 inch square baking dish. 
2. In bowl sift together flour and  bicarbonate soda. Add cinnamon, sugar and salt.  Make a well in the centre.
3. Put the oil, pineapple, eggs, bananas and  vanilla into the well in the flour mixture. Stir by hand.
4. Fold the pecans into  the batter. Pour the batter into the prepared pan. 
5. Cook in the oven for 30 minutes. 

Caramelised Banana Pancakes

 
Ingredients
1 large egg 
3 1/2 oz/100 g flour, sifted 
pinch of salt 
1 cup half-fat milk 
1 oz/30 g butter, melted 
sunflower oil for greasing 
2 large, firm bananas, sliced 
3 tbsp Madeira, dessert wine or 2 tbsp Drambuie 
2-3 tsp tsp raw sugar 
Directions
Beat the egg, flour, salt and a little milk to form a smooth paste. Gradually mix in the 
remaining milk, then stir in the butter. Brush a non-stick, medium-sized frying pan with 
the oil and heat until very hot. Pour in 2-3 tablespoons of batter, swirling to cover the 
base of the pan.
Cook the pancakes for 1-2 minutes each side, until golden. Repeat to make 7 more, 
keeping the pancakes warm and layering them between sheets of baking paper to stop
them sticking. Preheat the grill to high. Wipe the pan, add the bananas and Madeira, 
wine or Drambuie and heat through gently, stirring. When most of the liquid has evaporated, 
place a spoonful of the banana mixture on each pancake, fold it into quarters and place in a 
flameproof dish. Sprinkle with the sugar and grill until the tops of the pancakes are golden 
and lightly caramelized.
