Banana Blueberry Cake
Ingredients
- 1 cup mashed banana (around 3 small, or 2 large bananas)
- 125g butter
- 1 teaspoon vanilla essence
- 1 cup castor sugar
- 2 eggs, lightly beaten
- 1/2 cup blueberries
- 1/3 cup sour cream or thick yoghurt
- 2 cups self-raising flour
Directions
- Preheat oven to 180C.
- Place butter, vanilla and sugar in a bowl and beat until light and creamy. Add eggs and beat well.
- Fold through flour, sour cream, banana and finally blueberries.
- Spoon mixture into a greased 22cm round cake tin and bake in a preheated 180°C oven for 1 hour and 10 minutes (or until cooked when tested with a skewer).
- Allow to cool in tin before turning out to serve.
